Pork Schnitzel ~ Servings 4
If you enjoy schnitzel as much as we do, preparing them your family is worth the time invested.
Serve your schnitzel with your favourite side-dish and a salad. Don't forget the fresh lemon wedges!
Ingredients
1 or 2 boneless pork tenderloin
1/4 cup flour
1/2 tsp salt
1/2 tsp freshly ground black pepper
1 egg, beaten
2 Tablespoon milk
3/4 cup fine dry breadcrumbs
1 tsp powdered garlic
1 tsp powdered onion
1 tsp paprika
Oil for frying - olive or avocado
lemon wedges, for serving

Ingredients

1/4 cup flour

Method
- Cut tenderloin into 2 inch pieces. Use a meat hammer to pound the pieces to 1/4 inch thickness.
- Set out 3 shallow bowls. One with a mixture of the flour, salt and pepper. The second with the egg and milk whisked together. The third with a mixture of the breadcrumbs, powered onion, powered garlic and paprika.
- Heat the oil in a large skillet on medium heat. Dredge the cutlets in the seasoned flour, then dip them in the egg mixture, and finally into the mixture of bread crumbs.
- Working in batches, sauté the cutlets for 3 or 4 minutes on each side. Remove the cutlets from the skillet and place on baking pan covered with paper towel.
- Bake on baking sheet at 350°F for 15-20 minutes or until fully cooked.
- Serve with your favourite side dish, salad.
- Don't forget the fresh lemon wedges! Lemon juice enhances the pork schnitzel flavour.
