
Faquitas
Mexican food is one of our favourite cuisines. Serve with hand-cut salsa & homemade guacamole on top of the sautéed chicken or beef. Make your own faquita seasoning.

Faquita Seasoning *
1/2 tsp chili powder
1 tsp garlic powder
1 tsp onion powder
1/2 tsp cayenne pepper
1 tsp dried oregano
1 tsp paprika
2 tsp ground cumin
1 tsp course salt
Mix ingredients together in a jar.
Store in a cool place for up to 1 year.
Hand-cut Salsa • 6-8 servings
3-4 large ripe tomatoes, diced
Peppers, diced - add half of each colour (red, yellow, orange)
1 cup sweet onion, diced
1 clove garlic, minced
1/4 cup of cilantro...add more if you desire
jalapeno pepper, minced
1 tsp lime juice or to taste
Mix well.
Guacamole
Ripe avocados, diced (quantity depends on size of avocados)
Red onion, diced
Cilantro, hand-full chopped
Garlic, 1 clove diced
Lime juice, to taste
Jalapeno peppers, to taste
salt, to taste
Mix ingredients in a bowl. Do not over stir or avocados will become mushy.
Faquita Mixture
2 Tablespoons vegetable oil
chicken strips or beef strips
1/4 cup Seasoning or more if needed
In a heated skillet or wok, sauté the chicken/beef until it is no longer pink. Remove to a bowl. Add sliced onion and peppers to the skillet plus more oil if needed. Sauté until peppers and onions have soften. Return chicken/beef to pan. Stir together until mixture is hot. Serve on warm whole wheat or flour wraps. Top with grated cheese, salsa, guacamole.
