Apple Cake
With an abundance of apples in my keeper, I decided to make 'Mom's Best Apple Cake' recipe. This is a family favourite. A couple of changes were made to the recipe... reducing the amount of sugar significantly and 'Monk Fruit Sweetener' was substituted. If you haven't heard of monk fruit, google for more information. Since reducing the quantity of sweetener, I then drizzled maple syrup over the unbaked cake. Delicious!
Ingredients
1 cup oil (I used grapeseed)
3 eggs, beaten with a fork
1/4 cup sugar (I used monk fruit sweetener)
1 tsp salt
3 cups diced apples
3/4 cup chopped nuts, of choice
2 cups flour (I used organic wholewheat)
1 tsp baking soda
2 tsp cinnamon
maple syrup, optional
Preparation
Preheat oven to 350° F
Sift dry ingredients into a bowl. Mix all other ingredients in a separate bowl. Combine all ingredients together with a spatula...no beating required. Drizzle batter with maple syrup before baking, optional.
Bake in a 9 x 13 inch pan for 30-35 minutes. Test doneness with a toothpick. Enjoy!
