Pasta, Grilled Italian Sausage with Sautéed Vegetables ~ serves 4
Another true favourite in my cooking repertoire is pasta dishes. Trying to be gluten-free isn't the challenge that it once was. Costco is a source for organic gluten-free pasta as is the Internet. GoGoQuinoa.com makes good pasta. We've enjoy their macaroni many times. It is made from organic white rice, & organic red & white quinoa. Great for mac & cheese. Well.ca sells an abundance of GoGoQuinoa products too! Chickapea.com spirals are made with chickpeas and lentils.
As mentioned before, we shop at the Western Fair Market on weekends. Purchasing our meat from Country Style Meats, their homemade gluten-free Italian sausage is tasty and not too fatty. On the grill or oven-baked, slice it up and add it to the cooked pasta & vegetables. Top with freshly-grated parmesan or reggiano cheese purchased from All 'Bout Cheese also located in the Western Fair Market. Don't forget the vegetables...
Ingredients
2+1 Tablespoons vegetable oil
2 cooking onions, halved & sliced
2 cloves garlic, thinly sliced
1 red or orange pepper, halved & sliced
10-12 button mushrooms, whole
2 cups of fresh spinach
4 Italian sausage
2 cups of dried pasta of choice
1 cup parmesan or reggiano cheese, grated
Method
Grill the sausage. Cut into bite-sized pieces. Set aside.
Heat 2 Tablespoons of oil in a large pan or skillet. Add the onions, garlic, pepper, mushrooms to the pan and sauté until vegetables are tender. Toss in the spinach just before serving. Cook the pasta as per instructions on packaging.
Toss together the grilled sausage and cooked pasta. Serve. Sprinkle with grated cheese. Enjoy!
