Carrot Cake
1/2 cup walnut
1 1/2 cups flour, of choice
3/4 tsp. baking soda
1 tsp. baking powder
1 tsp. cinnamon
1/2 tsp salt
Mix well; Add
3/4 cup salad oil
1/2 cup sweetener, of choice
2 eggs
Beat well; Add
1 cup grated raw carrot
1/2 cup crushed pineapple
Bake in greased 8x8 pan for 30 minutes at 350°F.
Icing:
1 pkg. cream cheese
1/2 cup butter
1/2 cup sweetener, of choice
1 teaspoon vanilla
Cream together cream cheese, butter and sugar.
Add vanilla. Beat well.
This icing recipe will actually frost a 9x13 cake.
