Ingredients
1 + 1 tablespoon olive oil
1 tablespoon butter
3 leeks, white and light green parts chopped
6 cups vegetable broth
5 pears, peeled, cored, and chopped
1 teaspoon ground savoury
1 teaspoon pepper
1 teaspoon salt
Instructions
Melt the olive oil and butter in a large pot over medium-high. Add in the leeks. Sweat until they become tender and translucent. Approximately 15 minutes.
Add the broth, and use your spoon to scrape up any bits that have stuck to the bottom of the pan. Add in the pears and bring to a boil. Reduce to simmer and cook 10 to 15 minutes until the pears are nice and tender. Season with savoury, salt and pepper.
Pour the soup into the blender. Blend in small batches until smooth and creamy being careful not to fill the blender too high to avoid eruption.
Garnish with shredded cheddar cheese or sage leaves, if desired.
Serve hot.
