Pear Loaf
Recently I came upon this recipe. Luckily I had 3 pears in the refrigerator ... it was time to bake this moist, nutty delicious loaf. Great with morning coffee or afternoon tea.
Ingredients
2 cups flour *
2 1/2 cups pears (2-3 medium-sized pears)
3 Tablespoons flaxseed or flaxmeal
1/4 cup sugar
3/4 cup coconut oil, melted
1 teaspoon vanilla extract
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon salt
1 cup chopped walnuts or pecans, optional
* (Original recipe calls for gluten-free flour. I used spelt flour, an ancient grain. Spelt is a distinct variety of wheat and does contain gluten.)
Preparation
Preheat oven to 350° F.
Remove stems and seeds from pears. Add pears, vanilla and melted oil to the blender and blend into a purée.
If you do not have a high-speed blender, blend the ingredients with an electric beater mixing all dry ingredients in a large bowl along with the pear, oil and vanilla purée mix until thoroughly combined. Fold in walnuts.
Add the mixture to a greased, parchment-lined loaf pan. Bake for 40-50 minutes or until a toothpick comes out clean. Let loaf cool before serving.
